With warm weather on the way many of us love to bring out the grill. Grilling is a great way to prepare foods that are delicious and low in both fat and calories. Flank steak is a type of beef that has a wonderful flavor and very low fat content. It is great for marinating and grilling and makes a good addition to any weight loss diet plan. Make sure when slicing flank steak to cut across the grain for maximum tenderness.

Ingredients (Serves 6):

1 ½ lb. lean beef flank steak
¾ C. dry red wine
1 ½ teaspoons lemon pepper
½ teaspoon minced garlic
Cooking spray

Directions:

  1. Combine wine, garlic, and lemon pepper.
  2. Pour over steak, cover and marinate in refrigerator over night.
  3. Heat grill to medium high heat.
  4. Coat grill rack with cooking spray and place steak on rack.
  5. Grill over medium high heat for 6 minutes on each side.
  6. Slice steak into small strips (across grain) to serve.
